Craftsmen have to know how to pound the meat into a thick sticky paste using the innate property of the pork so that the finished Meatballs have an al dente bouncy texture. It requires years of experience to achieve this. The final step is forming and cooking in boiled water. Small balls are formed with the meat paste and cooked slowly in boiled water.
